Package and Bulk Rice
Our rice is grown in flooded fields North of Sacramento California. It is planted around April and harvested around October.
After harvest it is dried in silos. When it is dry enough, it is sifted to remove any non-rice material and then milled using friction. Immediately after it is milled, using friction, it is packaged and shipped.
We don't use a nitrogen flush before sealing our packaged rice.
Wild Rice
Our Wild Rice is grown in flooded fields. It is then stored in open bins to cure for 1-2 weeks. From there, it’s soaked for an hour in water, then roasted for two hours to dry it back down. It is then milled and scarified to allow for a shorter cook time.
This is a little different from how wild rice has traditionally been grown and harvested, but we still try to maintain a similar end product by curing and roasting the rice.
Sprouted Rice
Our rice is sprouted using a humidity / steam process. The germination process gradually increases temperature and humidity levels, creating an environment conducive to sprouting. During the final phase moisture is reduced, preserving the nutritional elements.
Rice Cakes
Our Rice Cakes and Thin Cakes are made by first mixing water and rice. This is fed into a rice cake popper where the rice is popped and then baked in a hot mold. Here the natural starches in the rice hold the Rice Cake together. Next, flavor is added, they are cooled and packaged within minutes.
Rice Cake Minis
Our Rice Cake Minis are made by first mixing water and rice. This mixture is added to small Rice Cake poppers and baked in a hot mold. Next the minis are put through a tumbler where flavor is added. Last, they are cooled and packaged within minutes.
Retort Rice / 90-Second Rice
To make our 90-Second Rice we use a "retort process" to cook the rice.
The rice is harvested and dried, like our packaged rice, then we add moisture to it and cook it under high pressure. Afterwards the package is sealed to preserve the pre-cooked status and allow for easy reheating.
Rice Chips
Our Rice Chips are made by first mixing the dough base. Next it is sent through rollers that spread out the base. It is cut into the triangle pieces and the chip is cooked (baked then lightly fried). After that the chips are tumbled, oil is added and then they are seasoned. Last, our chips are packaged.
The very last step is kinda the coolest! A laser is used to detect air escaping from the package and if there is a hole in a seal, that bag will be removed from the line.
Rice Syrup
Brown Rice Syrup is made by heating brown rice until the natural sugar can be extracted. The product is concentrated and reduced to a syrup.

Some of your rice packaging includes “California” on the product name. Does this mean that those products that do not include “California” might be sourced from elsewhere? I want rice only grown in California.
